Preheat oven to 350 degrees. Grease two 9x5 loaf pans and set aside. In a large bowl cream together sugar, oil, eggs, and vanilla. In a separate bowl whisk together flour, baking soda, and salt.

Alternately add the flour and the buttermilk. Add half of the flour and mix until just combined then add half of the buttermilk and mix until just combined. Continue until all of the flour and butter milk are added. Gently mix in mashed banana and pecans.

Evenly divide the batter into the two loaf pans and bake 40-50 minutes. A toothpick inserted should come out clean. Allow the dough to cool 10 minutes then remove from pans.
